so tired and hippos-

sorry for the lack of post. i have never been so tired in my whole damn life. also , sorry for saying damn, i swear alot when i am tired, and mad, and grumpy and bored and pretty much all the time. my mom actually asked james if he "could control his wife" on sunday. it got me thinking... i have only been married to james and lived with him for 5 years but i have known and lived with my mom for much longer. so wouldn't it be my moms fault that i swear so much??
back to being tired. last month at my appointment my doctor asked how i was doing. i told him i was extremely exhausted and felt that no matter what i did i couldn't keep up with life or build any energy. he asked me how old my kids were to which i replied " 3 and 1" he laughed and said " sorry i can't help, it's just your life that's exhausting"
i would have liked to thought that it ( meaning life with kids) gets easier, but i know better. i see my mom and other ladies with teenagers and really it doesn't get any easier anytime soon. plus you have to deal with that ugly awkward stage they go through ( not looking forward to that, hopefully my kids won't be that bad? i was pretty ugly for a while there...)




while pregnant with ezra, james and i were watching a show on the discovery channel about hippos. apparently the "king" of the hippos is called a beach master. somehow i got stuck being called beach master...and tick tock ( from the creepy return to oz movie) and preggie piggy and i'm sure other names i have blocked out. whoever thought it was a good idea to be pregnant in the summer needs to die. seriously i am feeling like a beach master and i still have 2 months to go. although at this time, feeling like a beach master is sounding better than having 3 kids to take care of. enough whining- i will try to post some kid pictures tomorrow. i leave you with this picure to think about.

bacon cravin' and mexican lovin'

so this pregnancy i have mostly been craving 2 things. first off mexican food. i always love mexican food and never get sick of it. i have really been dying for some good chips and salsa lately. i found my kitchen cafe blog last week and thought to myself " i would eat every single thing she makes." so i did... well not all yet, but i have made three of her recipes so far. The first being the honey - lime enchiladas... so yummy! the original recipe had you cook the chicken and then marinate it all day. i decided to just make the marinade, throw the chicken in the crockpot ( for 4 hours on low) and throw the marinade in with it. then i just followed the rest of her directions. oh yeah i also used corn tortillas, we aren't big fans of flour tortillas in enchiladas. i also made the pioneer woman's pico and fried up some fresh chips ( with lots of kosher salt of course) with some watermelon to round out the meal. go try it. my changes are in red.

::Honey-Lime Chicken Enchiladas::

6Tb honey


4.5 Tb lime juice


1 Tb chili powder


1/2 tsp garlic powder


1 lb cooked chicken, shredded


flour tortillas ( corn tortillas)


colby or monterey jack cheese, shredded


10 oz. can green enchilada sauce


1 cup cream

Mix first 4 ingredients together and toss with shredded chicken. Let it "marinate" for at least a half hour. ( i just threw the marinade and chicken in the crockpot on low for about 3-4 hours, then i shredded it) Pour some green enchilada sauce on the bottom of a 10x10 casserole dish or 9x13 pan. Fill flour tortillas with chicken and shredded cheese. Pour the rest of the can of green enchilada sauce mixed with 1 cup of cream over enchiladas then sprinkle with more cheese. (When using a 9x13 I like to use 1 1/2 10 oz. cans) Bake at 350 for 30 minutes. (Put it under the broiler at the end to make the cheese brown and crispy on the top.)

secondly i have been craving breakfast food. i don't really eat breakfast in the morning ( except some weekends) but i have really been wanting it for dinner. so again i tried this recipe from the my kitchen cafe blog, for pancakes. of course they were yummy, cream makes anything yummy and these really hit the spot. there is the requirement of bacon with any breakfast item right now. who doesn't love bacon? oh salty, fattening food of the gods, why are you so delicious??? next on the list is my friend krista's recipe for banana walnut pancakes.

::Zephyr Pancakes::

from the King Arthur Flour Baker's Companion


2 cups (8 1/2 ounces) all-purpose flour


2 1/2 tablespoons (1 3/4 ounces) sugar1 1/2 teaspoons baking powder


1 teaspoon baking soda


1/2 teaspoon salt


3 large egg yolks


1 1/4 cups (10 ounces) heavy cream


1 1/4 cups (10 ounces) buttermilk


2 tablespoons (1 ounce) butter, melted


1 teaspoon vanilla extract (optional)


In a medium-sized bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the egg yolks, cream, buttermilk, melted butter, and vanilla. Whisk the wet ingredients into the dry, just until combined - it's okay if there are a few lumps.Preheat and lightly grease (I didn't grease my griddle and they didn't stick) a heavy skillet or griddle. Scoop the batter onto the griddle with a 1/4 cup measure or a large spoon. Make sure the heat is slightly less than medium. The pancakes will puff up very high. When the first side is golden brown and the edges start to look dry, turn the pancakes over to finish cooking the second side. Remove the pancakes from the griddle and keep them in a warm serving dish until you have enough to feed everyone.

3 brothers

I'm sorry for the lack of post. we are out of batteries so i haven't been able to upload pictures. up until now ( actually yesterday, i'm just lazy) i haven't had much to say. i don't know why, but i thought this picture of three brothers was silly. look at the poor brother with the girl hair... and what about the baby boy with the dress on. some historical things are odd eh? well to get to the point we found out that we are having another boy! james and i are both really excited and very relieved. we thought for sure that it was a girl this time. not that we have anything against girls or anything( we are actually hoping that the baby of the family will be a girl)but we thought 3 boys would be so fun.

no- you have it all wrong

there was to be no congratulations on the last post! i was looking for pity. something like " oh you poor dear, that sucks that you have to be pregnant and breastfeed again and never get your body back for the rest of your life." ( side note this has been my life for the last 3 1/2 years but for 2 glorious months after i stopped nursing ezra and before i got pregnant with eli, let me tell you i was skinny). or possibly this one " oh - i'm sorry that you have become one of those crazy mormon ladies who keeps popping out children one after another." or at the very least- " honey- get those tubes tied ." i guess that spending the next 6 months feeling sorry for myself and being resentful aren't going to help though. i am pretty sure i'll like and possibly love the thing when it is born. who knows though... ( i am kidding here i hope you all know, my kids are the most important and dear things in my life... hormones )

keep your fingers crossed


so all you fellow arrested development fans. have you heard the latest news? i hope that they make the movie and soon. i really don't know why they cancelled the show in the first place. on another note i guess i should tell you all soon so you don't just think i am fat when you see me but i'm pregnant again. no, it was not planned to be so soon after all that happened in november. no, i am not excited ( more like super grumpy and in denial) but am scared silly that i will soon be the mother of 3 children 3 1/2 and under. no, i am not hoping for a girl this time... i honestly am scared to death to have a girl. yes, this is the 3rd time that i have gotten pregnant on these so called " birth control pills" ( and yes- i do know how to take them properly thank you ) i guess i can be thankful that i'm not a pioneer or renisance woman - i would be having a baby a year! oh by the way i am 3 months and seriously fat fat fat already ( we call it preggie piggie or the beach master... go look that one up) so be gentle if you see me, i am in a fragile state of mind.
